I don't know why I sometimes forget about the awesomeness that is the combination of apples and cheese, but when I rediscover it, it is sublime.

I am on a no cheese kick. This post makes me think maybe digestive troubles would be OK...

On another note, I did our taxes today (the latest ever) and I thought of you. Only two more weeks! How are you holding up?

The combo I was eating was Pink Lady and Medium Cheddar. It's all about the offset: Pink Ladies are sweet, so I used a sharper cheese. If you have a more tart apple, a milder cheese is in order, like colby or provolone.

Oh, yes. I've had cheese and apple for brekky for the last few days as I've been trying for fewer carbs. I love Royal Gala and medium Cheddar.
